Live cultures – confirmed in the lab

Microbiological analysis of the classic variant showed live, active cultures: lactic-acid bacteria (LAB) at about 5 × 10⁵ CFU/ml and yeast at about 10⁴ CFU/ml, as well as the acetic-acid bacteria characteristic of kombucha. This is lab proof that the drink truly lives – possible only thanks to the absence of pasteurization.

Safety confirmed by testing

Microbiological tests found no pathogenic bacteria – Salmonella, E. coli and Enterobacteriaceae were absent in all samples. The drink is also protected by its naturally low pH (about 3.5).

Natural polyphenols from tea

Chromatographic analysis (HPLC) confirmed natural polyphenols from tea – including gallic and chlorogenic acid, catechins and quercetin. The ginger variant contains more than twice as much as the classic.

Research with science

We analysed the composition and quality of Nasza Kombucha using liquid chromatography (HPLC) and microbiological methods, in cooperation with scientists from the Warsaw University of Life Sciences (SGGW) and at the accredited SGS laboratory.
