The “mushroom” floating in the bottle is a SCOBY — it forms after bottling as a result of the final fermentation. It is a cluster of live bacteria and yeast and the best proof that the drink is completely natural and unpasteurized, with no artificial additives or preservatives. It is perfectly safe to drink.
